Banana Bread Muffins


Easy         |        Prep Time 10      |        Total Time 30   |        Serves about 14




Ingredients

  • 3 bananas
  • 3/4 cup sugar
  • 1 egg
  • 1/3 melted butter
  • 1tsp baking powder
  • 1 TSP baking soda
  • 1/2 TSP salt
  • 1 1/2 Cup flour
  • 1/4 cup semi sweet chocolate chips (optional)




Method

Preheat oven to 375

Mash the bananas.  Then add the sugar, butter, and egg.  After mixed together, add all the dry ingredients and the semi sweet chocolate chips.  After everything is mixed then scoop a small amount and put into the trays for muffins.  Bake for about 20 minutes or until dry inside.

Eating at Disney's EPCOT

A Day Of My Life! 

Being a Disney Annual Pass Holder allows me to try tons of amazing disney foods.  The other day I took to EPCOT, and ate some delicious foods around the world showcase.  I sadly didn't eat in every country, but that is a must do one of these days.

Disney food isn't the healthiest of the foods, but when you're on vacation, or take day trips like I do, it's alright to stray from eating healthy while at Disney.  At least it's yummy, right?

My brother and I got there around park opening which was at 9, so we were craving something for breakfast.  We came across this coffee/espresso cart, which also sold some pastries and huge donuts.  You would think that this donut would be about $10 because it's, well, Disney, but it was about $4.  We were shocked, so of course we had to get one to share.  It was bigger than our faces.

Later in the day, we were starting to get hungry because it was lunch time and we met up with our cousin and she wanted to eat in Italy.  So we made a reservation at the Tutto Italia Ristorante in Italy.  I didn't realize it was really expensive and I was hungry but not super hungry so I spoke to the waitress who told me I can get a smaller dish of pasta with sauce for about $8 which was a lot cheaper than the $20 spaghetti dish my brother got.  It was super filling and I ate every bit of it leaving me full.  Totally worth it and really good.



One of my favorite treats of that day was in Norway.  It’s a Norwegian snack which consists of a sweet bread roll injected with vanilla pudding/custard, then covered with a sweet icing and toasted coconut shreds.  Just thinking about it makes me hungry.  This is a must when you come to EPCOT.  It isn’t the filling, it was pretty light and I as surprised about that.  I couldn’t finish it all in one sitting, so I got a to-go container and finished it later that day.


And of course I had to get one of my all time favorite foods at disney, Popcorn.  It's the perfect snack to share with the family.  I love the souvenir container it comes in, which you can get for an extra $2 than the cardboard box it normally comes in.  Totally worth it.



We walked around to the rest of the countries in the world showcase and decided to stop by France for a French pastry.  I opted to get the Napoleon which was so good but next time I would share that with someone because it was so filling.  My cousin got the Eclair which she ate in a heartbeat.  Everything there looked amazing.





White&Milk Chocolate Chip Cookies

Ingredients

2 1/4 cups flour
1/2 TSP baking soda
1 cup butter
1/2 cup sugar
1 cup brown sugar
1 TSP salt
2 TSP vanilla extract
2 eggs
1-cup semi-sweet chocolate chips
1 cup white chocolate chips



Process

In the bowl of an electric mixer combine butter with the
sugar and the brown sugar.  Beat that until it is a fluffy
consistency.  Turn the speed down to a lower speed and
add in the salt, vanilla, and eggs.  Once that is mixed;
about 1 minute, add the flour mixture.  After that is
combined manually stir in the chocolate chips.

Now place small balls of dough on a baking sheet on top
of parchment paper to bake.

Bake about 8 to 10 minutes or until golden but still soft.  
Remove and let cool for a few minutes.  The cookies will 
still continue to cook for a few minutes outside of the oven.

Any leftover dough can be refrigerated to make another 
time or you can eat the cookie dough, like I do.

Homemade Guacamole (+ bonus recipe)

This guacamole recipe is so easy that you'll be asking yourself why you never made it.  It'll get you making guacamole all the time. 

Ingredients:

  • 4 Avocados
  • 2 Tomatoes
  • ½ Jalapeno
  • 1 TSP Garlic
  • Lemon Juice (Amount to your liking)
  • Garlic Powder (Amount to your liking)
  • Salt and Pepper (Amount to your liking)






Process:

First you’ll want to cut the tomatoes into small chunks and put those off to the side.  Then do the same with the jalapeno, but don’t forget to take the seeds out.   One thing I’ve learned while cutting a Jalapeno is to not touch your face until you are done cutting and you’ve washed your hands.  Trust me, whatever part of your face you touch will burn like crazy. 



Next, you’ll want to cut the avocados in half and scoop out the avocado into a bowl.  Don’t throw away the pit because they will be useful later on.  Once in the bowl, just mash the entire avocado down with a fork.  Then add in the tomato and jalapeno and mix.



When all is mixed, just mix in salt and pepper, garlic, garlic powder, and lemon juice.  There’s no amount of how much to put in, just put in whatever your taste buds are wanting.   I love garlic so, for me, the more garlic the better.

Once all is mixed together and to you liking, you are all set.  You can serve them in little bowls and enjoy.  It’s the perfect healthy and scrumptious treat.

Now a little trick I found, is that if you save the pits of the avocado, that you can put them in the guacamole that it’ll help keep the guacamole good and from the avocado from turning color.  You can also do that if you are just eating half of an avocado.  Just keep the pit and it’ll keep it good for a few extra days.


Bonus Recipe: Wonton Wrapper Chips

I am addicted to these wonton wrapper chips and they are so good that you don’t even need dip with them.  This recipe is super easy to do.  Here’s what you need:

Ingredients:
  • Wonton wrappers
  • Coconut Oil Spray
Process:
What you will do is cut the wonton wrappers in half so it looks like a triangle.  You’ll put those onto a cookie sheet.  Next spray the wrappers with coconut oil spray.  An alternative to coconut oil is olive oil spray that works too.   

Preset the oven to 275 degrees.

Put the sheets into the oven and set the timer for about 10-20 minutes.  You’ll have to watch them during that amount of time, and you’ll know they’re done when they are crispy and are golden brown.
