Hello!  Welcome to Living Laur! I just started because I love to cook an it’s one of my favorite things to do.  I found that when I cook I make up these weird, yet delicious and healthy concoctions that I wanted to share with the world and YOU!

This past January I decided to make one of the biggest choices in my life, even showing my parents that I am becoming more independent by these choices, becoming a vegetarian.  I wasn’t getting much protein when meat was still in my diet, but now I cant get enough.  I even make sure I have at least something protein wise with every meal, sometimes it wont happen, but a girl can try.

When I gave up meat, I also made the choice to give up soda as well.  I still of course drink Gatorade and crystal light teas and lemonades, but no carbonated sodas.  I have felt a huge difference in my body since giving up soda.  But sadly I still drink coffee, I’m a coffee addict actually, but I have to be since I am in college still and with those late nights I need something to keep me going though the night.

 Changing my lifestyle and becoming a vegetarian has not only made a difference in my life but it has allowed me to open up and try new foods.  Now I’m not here to try to persuade my lifestyle on anyone, I just want to share my food creations which not only can vegetarians can eat but meat eaters will enjoy as well.

Now you may also see my journey becoming a vegetarian because it is all still new to me.  I started this journey in January of 2015 so its still pretty new to me.  Just recently my doctor told me I need to take iron supplements so I am trying to figure out what foods have iron in them that I can consume, or what vitamins I can find that’ll give me the nutrients I need.

But more than anything I want this blog to show how easy and delicious healthy food is.  You can make so many delicious foods with vegetables and fruits that you’ll be surprised how good it tastes.
